How long are you planning on being in Ireland for
Tayto Park theme park is about 30 mins from Dublin.
I would consider going to a gaelic football or hurling game, if you are here at the right dates and able to get tickets (www.gaa.ie)
I don't know the area around shannonbridge but Clonmacnoise is nearby if you interested in visiting a monastic settlement0 -
Loads of things to do in Dublin. HoHo bus, museums etc.
I would be looking at the Visit Ireland website- actually not very helpful! it doesn't have a search facility.

All the sites seem to want to sell you a package. I'm thinking you might be better off going into a tourist office when you arrive as they are seriously helpful
