Have you got the recipe for the chowder PP? I had a little Google after you mentioned it yesterday as it sounded good, but I wasn't blown away by those online so just wondered what you'd used?
Hi SC, I used this one https://www.bbcgoodfood.com/recipes/corn-split-pea-chowder/amp
I didn’t have fresh chilli so I used flakes and I didn’t have fresh ginger so I used ground.  I also didn’t have coconut yogurt and I only had one tin of coconut milk which I needed for a curry so I just put about a 1/5 of a tin in and then thinned it down with milk ( I used oat). It was really nice and I’m not generally a huge fan of split peas but they needed using up!  I’d definitely make it again x

Your down time sounds really lovely PP, I keep meaning to read more and love it when I do. I just seem to get distracted by technology.

I'm trying to be more plant based too, I actually love oat milk now after being a little worried I'd have to give up my decaf coffees.

    June 2025 - part 1 - £19,145 part 2 - £21,973 Total - £41,118 29 months to go!

I too was worried about my coffee and when we first discussed a more plant based diet I stated like a petulant child that if it ruined my morning coffee I wasn’t doing it !😂 I now much prefer oat milk to dairy.  I also like soya but can’t get on with almond which is odd because I love almonds!

I do love my down time 😀. All those years of juggling raising kids, work and caring for my dad has made me really appreciate this season of my life.  A bit of self care goes a long way !
I hope you find time for some this weekend xx
