Anyone got any meal prep recipes that are delicious and nutritious, and good value? 
OH and I typically cook lunches on a Sunday for Monday-Wednesday. Then get a sandwich on Thurs and meet up for lunch on Friday.
What we cook is usually things like Chicken and Rice with veggies, but always on the lookout for new things to try.

Mince can be used for all sorts of dishes - shepherd's pie, lasagne or chilli, for example. I use (5% fat) mince, onions, carrots, leeks, courgette, whatever veg I have in and tinned chopped tomatoes with dried herbs to make a basic mix and then split it between the above meals, adding whatever is needed to make that meal up.
You can also use it for spaghetti Bolognese, obviously!
Pasta bakes are quick and easy - just add a tin or two of tuna and grate some cheese on top (this usually ends up being the last bit of cheese that has gone a bit hard for sandwiches etc.. but melts just fine on top of the pasta!). Again, whatever veg I have left in the fridge gets thrown in here, usually at least four or five different things.
Chicken is really versatile, you can cut it into cubes and make sweet and sour, grill the breasts and have with new potatoes or even coat with flour and spices and make a KFClike "fried chicken". I know you said healthy and nutritious but if you make things yourself and tweak them to get rid of the unnecessary ingredients, it's easy enough to still have what FEELS like takeaway products that are much better for you, once in a while!Sealed Pot 5 number 15440
