Cooking for one (Mark Two)

Good evening everyone,
Farway - should have said that's a splendid looking apple cake.:D I wish my garden was at the gentle tidying stage - still lots to do before winter!
Holly - being awakened at silly o'clock brings back not-so-fond memories of having the boys at home. At least there wasn't a squad of mates all starving.....
No gardening done this afternoon - I kind of lost my oomph, so a pretty lazy day has been had:o.
Most of the pot of lentil soup has been dispatched to my sister just kept a couple of portions back (no doubt one for me and one for my Dad). Dinner tonight is steak as planned with a few fried potato slices, mushrooms and tomato. Tomorrow I must have a good rake through the fridge as I seem to have lost track (not sure why) of what's there and needing used up!

Having a bad time with MH. Not being nice to anyone, or to myself, hence in hiding.
Tonight was Bambi burger, oven chips and salad.
Cooked up a storm yesterday - vats of chilli in the freezer, which have benefited from the overnight maturing.
Both cats are doing well. Boy Cat seems to have developed an addiction ti crisps, together with a full on mugger mentality. Girl Cat is just as sookie as ever.0 -

(((hugs)))
At least you're eating well meals sound lovely:)0 -
yesterday food was a success, smaller meals spread through the day, I think I ate less overall because I was not hungry at any time but the main thing was that my stomach was happier and I was able to lie flat all night. I`ll probably do it this way as much as I can in future, I never felt deprived
Today started well with muesli plus rolled normal oats soaked in almond milk overnight. I`ll get the berries out in a mo, for later, the nuts are easy to grab anytime. My treats for the day could be flapjack topped crumble, made and in the fridge and a couple of small slices of spelt with damson jelly, I`ll be treating these as mini meals, those and the berries and nuts and the 85% chocolate
Freezer diving, I unearthed pork sausagemeat and streaky bacon, I`ll turn those plus grated carrot, onion and herbs into pasta sauce to freeze in portions, To join the 6 rm turkey meals I prepared yesterday. I had one for my last meal with no grains of any sort, not even thickened and went to bed 4 hours later, no gerd/heartburn. Any grains I eat are being eaten before mid afternoon
Coffee at 9.30 and then a cycle ride for health and well being, few uphill slopes to make the heart tick faster and that`ll be it for the day, done and dusted0 -
Morning all
Breakfast was the very last of the apple cake, with Greek yoghurt. That cake didn't last long, but it was very moreish
Busy making a couple of corned beef salad rolls for lunch at RHS Wisley today. If anyone saw Gardeners' World on Friday one of the things I will be looking at is the new "tropical" area before Autumn really gets going. At least sun is out for the momentEight out of ten owners who expressed a preference said their cats preferred other peoples gardens0 -
My salted brisket experiment worked really well - one I'll do again with a larger piece next time as the bit I used was only 700g so just enough to split for some between myself, my son and my Dad who happened to arrive while it was being sliced
Can I ask how you did the brisket, any recipe I found on t'internet seemed very complicated and used saltpeter :think:Jan - June Grocery spends = £531.61
July - Grocery spends = £119.54
Aug - Grocery spends = £42.190 -

Hi I used this one - saltpeter is optional (I didn't have any but I did use a teaspoon of "curing salt" to help keep the pink colour. It should be fine without will just look greyish in colour http://www.telegraph.co.uk/foodanddrink/recipes/9064030/Hail-to-the-beef-sandwich.html I used Schwartz pickling spice which I got in Morrisons (I think:) ). I cooked it in the slow cooker (3 hours high, 3 hours low - though mine was only 700g so a bigger piece might need longer), I did think it was worth the effort
Good morning everyone,
Not much by way of cooking happening today as I've various bits in the fridge needing used up
SquirrelSmall - hope you feel more like it soon x0 -
I cooked brisket yesterday. I sealed it in a frying pan, sprinkled it with black pepper, then put it in oven at 150C for 5 hours.
I'm not sure how heavy it was but it cost just over £15 and was enough to feed 6 well.0 -

Thanks Caronc, you are the first person I have heard mention it; I've been meaning to give it a go for years following on from a visit to NZ where they call it corned beef - no resemblance to the tinned stuff - and I think they can buy it prepped and ready to cook. I already have pickling spice in the cupboard so will give it a go in a couple of weeks time when I have gone through some of my freezer suppliesJan - June Grocery spends = £531.61

I made myself a crisp sandwich when I got in earlier.:o:o:o0
