Metal, wood or plastic shed ?

Hello good people of this forum.
I'm looking for advice regarding new shed or sheds. Currently we have two 8 by 6 wooden sheds that have seen better days. Looking to replace with either one huge shed or 2 the same size. If we go with one large we have to consider the ground levels as its on a slight slope so more preparation needed but not sure if one large may be better. Any advice regarding which we should choose? Wondering which material is more hard wearing & needs minimal maintenance. The sheds right now are situated away from our main garden area in a section which is fenced off so we don't look upon them. Any other tips re window or not, double doors etc? It's a minefield!
