What is the roof made of and how easy is it to get up there and clean?

I wouldn't use bicarbonate and vinegar together. One's acidic and the other is alkaline, so they'll just react together

Bird poo is alkaline, so vinegar will probably be best to neutralise it.

I'd cover the poo in old cloths and soak them with water. This would help to soften it and make it easier to remove.
