    I always put new bags of flour in the freezer for a couple of days when I get them, to kill any weevils that may be in there already. Then they go into an airtight container and back in the cupboard. It would seem like a waste of freezer space to leave it in there longer, but flour doesn't freeze into a solid lump or anything, it's just very very cold when it comes out so I don't see why you couldn't leave it in there if you really wanted to and didn't mind using the space. I would think you'd want to bring it up to room temperature before baking with it though.
  • I freeze ready grated cheese as I buy it cheap in bulk, and it lasts for ages! bung it on a pizza or lasagne top straight from freezer ... for some reason it tends to be much less 'wet' when it comes ready grated ..

    Ready grated cheese contains an anti-caking agent, usually potato starch, so runs much more freely than my home grated stuff.

    Thanks everyone. Took your advice, just put the whole bag in the freezer and found it wasn't stuck together at all. Great! So many thanks - a successful moneysaving move.

    Maddiemay - I didn't know what the coating was that kept the cheese loose - very interesting. I see that it can be bought very cheaply from Holland & Barrett so if I come across a mega offer on block cheese somewhere I'm going to be busy!
