Opinions please - Child supplement vs 2nd Adult

Hi Guys!
I want to go away with my Daughter (almost 7yrs) but keep seeing that child supplements are mainly valid with a second adult and in some cases there are no child supplements. Well, could I just book it as 2 adults even though she isn't technically an adult?
What is the in's and outs of this?
