I've put some items from a seller in Hong Kong in my basket & had searched for the items using the ebay UK site. However, I notice when I try to pay that the payment system is breaking my order down in to separate lots, stating that some of the items I wish to buy are in foreign currency. Some are Australian dollars, some USA dollars & some Sterling.
Will I have to pay exchange rates to paypal for the dollar transactions?

Yes, that's why it is broken down by currency. You will see the sterling amount immediately before you pay.0
