Car insurance advice - apprentice footballer

Hi, would be grateful for any advice on the following:
My 17 year old son has just passed his driving test, and I want to look in to having him put on our car insurance (he is hoping to get his own car when he is 18).
According to him, most of his fellow apprentices say that they are students, because it is a requirement of the course to complete a Level 3 BTEC.
If we say he is a student, is this a lie (I am assuming it is, as it's not full time study)?
Also, if we say he's an apprentice, will they definitely ask what the apprenticeship is in? I've looked at the insurers' list of jobs, and apprentice doesn't seem to be a category on its own right. However, he does not have a contract as a professional footballer, so he obviously wants to avoid putting that down as his occupation.

He is a professional footballer / sportsman / athlete unless you persuade an Insurer to accept him as a student etc.
If you declare his occupation incorrectly and he has an accident, your Insurers can withdraw cover which will ultimately mean you as the policyholder end up paying all of the claims from any third parties including passengers of your vehicle0 -
