If a baby is born to parents of a different nationality, what nationality would the baby assume. For example:
Dad is British born and a British citizen
Mum is Russian born but has a Latvian passport and I'm assuming is a Latvian citizen.
Baby is born in the UK
Would the nationality of the baby be affected if the parents were married or just cohabiting?

The British parent is important
"Born in the UK after 1983. You're automatically a British citizen if you were born in the UK after 1 January 1983 and 1 of your parents was a British citizen or settled here at that time."

Each country has it's own laws, the British example is explained above. I'm unclear on the Latvian.
Though it is equally unclear how many citizenships the mother has anyway?
Some countries only allow one citizenship to be held - ie if you take a second they will revoke your primary.0 -

Latvia allows dual citizenship and broadly works along bloodline (Jus sanguinis not jus solis). So probably an entitlement to dual nationality.
A latvian passport would keep you within the EU for freedom of movement after Brexit...0 -

Worth checking it's full nationality though, as Russian birth (or was it USSR birth?)0 -
Nationality doesn't really matter as in Latvia you have a choice to display it in the passport or not. However Latvian passport doesn't mean that she is Latvian citizen as a lot of people living in Latvia have Latvian non-citizen passports, normally people born in Russian families who themselves aren't citizens but permanently live in the country.
There are few ways to acquire Latvian citizenship - one of the parents is citizen (child automatically has a right to have citizen status), finish secondary education in Latvian school (where they teach in Latvian, there are Russian schools which teach in Russian and that wouldn't count) or actually pass citizenship test (the same concept as here, you have to show that you live in the country for some time).0
