Home AV / Invisible Air Con

Good Afternoon friends.
I am hoping someone will at least understand what I am asking because I'm not that sure myself
We are in the throws of renovating a barn into a home for ourselves. The bones of it is complete and the plumber is about to start the first fix and so on.
As this is our "dream home" we wanted to go all out and include all the little luxuries that we've always wanted and we've been able to get most of what we've wanted but have fallen on some stumbling blocks! One of them being a smart home AV system and the other being air conditioning - this is more important as due to the construction of the building the bedrooms become unbearably hot in the summer!
Could anyone recommend any installer for either or does anyone have any experience on doing this themselves? Is it easy enough to do?
We were put in touch with "Stone Audio" in Dorset. Alex there demonstrated a system that we wanted at a reasonable price - however it has since been impossible to get the ball rolling with him. Repeated emails and phone calls have not been fruitful. I'm not sure if it's because we were a young scruffy couple and he didn't take us seriously or because he just cannot be bothered. Either way - it's got to the point now where this is holding us back! The system we looked at included a "matrix" box which would be installed in the utility room and cables that run between the walls - eliminating the need for anything other than a TV and Speakers in the rooms themselves. This could also all be controlled over the WIFI with our ipads / iphones.
As for the air-conditioning... we were looking at an "invisible" system which eliminates clunky boxes on the walls. You have a grate in the desired place wall/ceiling/floor and the system is ducted throughout the house inside the walls.
Any ideas? Getting fed up and losing interest now. I've been chasing these people and these ideas for nearly a year.
