Kitchen sinks

I'm in the final stages of planning my kitchen. I'm having a modern white gloss handleless style.
What type of sink should I have? My deffault is a Franke inset sink, but I've recently seen undermounted sinks.
I'm going for a modern look, so will not be having a Belfast sink. I've changed my mind several times about the worktop, and may go for a quartz one that needs to be templated.
What are the pros and cons of inset versus undermounted?
