Blackberries

Does anyone have any recipes for the tons of frozen blackberries I have?

I've done crumble, pie etc.

    We used to sometimes have just blackberries and custard... no recipe required :)

    Apple & blackberry pie, apple & blackberry crumble.

    Jam?

    I was never keen on blackberries - the bits get in your teeth!

    Blackberry whisky! Won't use up a lot of berries but worth making. :)

    Blackberry pie bars - google and there's lots of recipes. I think I used one similar to this:

    I make a load, cut them into slices and freeze. They make a nice treat in with my packed lunches instead of bicuits or cereal bars.

    Blackberry vodka is wonderful - I speak from experience!

    Blackberry Jam
    2lb blackberries
    2lb sugar
    1/4 pint water
    Juice of 2 lemons
    Just boil up, carefully, boil til setting point is reached and pot in the usual way.

    Blackberry Fool

    8 oz blackberries
    1 tablespoon sugar
    2 teaspoons vanilla essence
    Whipped cream
    Water
    Put berries in a pan and cover with water; simmer til soft; add sugar and vanilla and stir til dissolved; rub mixture through a sieve if you can be bothered; fold in cream; serve chilled.

    Blackberry wine
    4lb blackberries
    3lb sugar
    7 pints water
    Pectic enzyme
    Yeast and nutrient
    Wash berries, put into a large pan (I use the jam cauldron) and crush them (I use a potato masher for this) Pour boiling water over them. Stir and cool. When at room temp, add pectic enzyme. Cover for 24 hours. Add yeast and nutrient, leave covered for 4 more days, stirring daily. Strain, add sugar, and put into demijohns to ferment - carry on from here as per usual winemaking practise.
    If your dog thinks you're the best, don't seek a second opinion.;)
  • Cook some blackberries and rub them through a sieve to get a puree then sweeten it to your liking and thicken it with a good amount of corn flour, enough to set it completely, pour into a mould and pop in the fridge to set and cool completely. Turn it out the next day and serve it with a few whole blackberries to garnish it, makes blackberry flummery. You serve it cold with ice cream, cream or plain yoghurt.

    Mrs LW: wow that was a blast to the past sudden memorys of my DM used to make those..

    I made seedless jam, boiled up in various pans and through muslim cloth over night.

    I also did the usual crumbles.

    Thanks for the link to the blackberry pie bars, elsien. I still have blackberries in my freezer so will try them. Yesterday we had ice cream in pancakes -also from the freezer-topped with blackberry puree.

    I also have loads of blackberries in the freezer. Was wondering whether they'd work in ice cream - this is the recipe I always use

    my DGS like it when I buy a box of cheapo vanilla ice cream and whip crushed blackberries into it, and return to the freezer to firm up again.a dollop of double cream also chucked in makes it delicious

    Both blackberry vodka and blackberry gin are lovely and make great gifts.
    I use 500g fruit to 1 litre of spirit, I steep it for 8-10 weeks shaking every so often, then strain. I then dissolve a cup of sugar in a cup of water and once cool add to the mix. Shake well and it's ready to bottle. Once bottled it needs another month and is best if left to mature for 3-4 months.
