    It's quite easy? You only need around 100g each per serving (a chicken breast is around 150g?). So if you bulk out your meal with lots of veg or other protein (e.g. lentils) then it's relatively easy.

    Am I the only one who wishes they wouldn't write "serves 2-3" on the packet because it just makes me feel greedy? :)

    Reminds me of the days when Mum would buy a chicken for Sunday lunch...it would feed the family for 3 or 4 good meals. (One of those meals was a thick home-made soup ..made with the bones and the giblets...thickened with rice...delicious!)

    It was 'normal' back then to eat smaller portions of meat. ...and to use every last scrap of the meat bought.

    We still do this, apart from the giblets - we use every last bit of the chicken and boil up the bones to make stock for soup. We do the same with ham/gammon joints - keep the stock to make lentil soup.

    Ooooooh lentil soup....or a nice thick pea soup....Mum used to get a pigs trotter from the butcher for that....and when I can find one I still do the same! ....cheap, filling , comforting and warming on a cold day - and darned tasty!

    Very easily when you add potatoes, cabbage, carrots, sprouts & broccoli to the plate.
