To get full quality you should in fact rip the HD clip and then use a video to audio convertor able to rip in FLAC or 320kbps

A better way would be to not convert the audio at all.

If you transcode the audio into FLAC, you'll have unnecessarily large files. If you transcode into 320kbps MP3 you will have unnecessarily large files and lose audio quality.

The best thing to do would be to extract the AAC audio file from the MP4 video file (with something like mp4creator), and then put it in a new MP4 wrapper (with something like ffmpeg).

Just type in "youtube to mp3" in google search and the first few search results are gonna give you the sites you are looking for.

There are google extensions that you can install so you can do it. Also lots of youtube videos about how to download and convert to mp3s.
