PCN but no ticket now Debt Recovery letter - help

Evening All,
First time on a forum so here goes. I have read a lots of threads about these but none seem to cover my situation: Yesterday I received a letter from Debt Recovery Plus demanding payment for non-payment of a parking charge notice - WHAT I had never received a ticket!!!
The creditor is Euro car parks and they state (according to DRP) that I overstayed the maximum stay in the staff car park at Sainsburys - no signs state that the car park was for staff only and I never, spend more than two hours in Sainsburys.
The trouble is I have no proof.
I had a coffee in the shop with my dad, paid in cash, then browsed in the shop (again with my dad), he bought stuff (in cash, he's old school), I didn't then I went home. The template letters are great but I have no evidence. I really don't want to have to pay £130 fine or go to court.
Help me.

Sounds a bit strange, normal procedure should be to send you a Notice to Keeper letter stating the infringement, within 14 days if you did not get a ticket.
Signage is a usual problem, I'd go back with a camera and see if you can see any signs.
Take photos of the entrance and where you parked.
I'm no expert but it seems like the parking firm breached data protection by passing your details to the debt recovery firm.
What date did you park and when did you get the letter?
I would try not to worry about it too much, worst that can happen is they take you to court.
The judge will put the onus on them to prove they are out of pocket and I doubt they would be able to.0 -

This is the same as all the other threads where people get a debt letter (whether a NTK arrived first or not, and your situation is common).

Where do the template appeal letters in post #1 of the NEWBIES thread say you must attach evidence? They don't. We hope you haven't been reading the awful template appeals provided by MSE in the article about 'fighting parking tickets' which tell a PPC everything they need to know, and more. Shockingly awful appeal templates.The template letters are great but I have no evidence.
More important is to complain to Sainsburys, as anyone would, of course, so what happened when you did?PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).
