Cat Litter Trays

Hi, just want advice on the best type of cat litter tray. I keep trying different ones for my two cats but still can't decide on what is best.
I find the enclosed ones cause less tracking and mess but look big and bulky and can be a faff taking the top off all the time to scoop out the mess and change the tray. The open ones are lower maintenance but then you can see all the mess and my cats chuck the litter all over the floor. I've also tried a deep plastic storage box but tracking is still a problem.
I keep the litter tray in my cubby hole which is really large.

I have a big cat and up until last week he was using quite a small box. I got him a larger one that's also deeper. I find it depends on the type of litter if it gets everywhere or not. If it's the clumping kind it smells less and doesn't create as much mess. If it's the white tiny rock looking one he actually flicks it out to play with it!
I've never had an enclosed for him as he's big so I think it would be a bit claustrophobic for him in one of those. Seeing the mess in the box doesn't really bother me, its only a bit of pee because we have nappy bags to get rid of the poos as soon as he does them.0
