Personal Injury Compensation Claim

Hi, just looking for some additional advice.
In brief, back in Spetember 2016, whilst delivering food products to a small restaurant, I slipped and injured myself on a wet floor on the premises. Please note, the delivery was made mid-morning before opening times.
There were no wet floor signs, no accident report book, and very unhelpful staff.
I filled in a sheet of paper on-site (they claimed it was their accident book, but it clearly wasn't), recording the date, time and how the accident happened. Signed it, and got one of their staff members to also sign and print their name next to mine. I photographed this for proof.
I informed my employer, and in turn, contacted my local solicitor.
I obviously supplied my solicitor with all images and videos I managed to take at the time of the incident, and detailed all medical advice sought and all diagnosis.
Since my solicitor sent a claim notice to the restaurant direct in October 2016, there has been absolutely NO response from them.
And upon the solicitors further investigations, it is looking more and more likely that the small restaurant has NO insurance (public or employers).
My solicitor is now on the verge of issuing a PAD.
My question is, what happens if they don't have insurance?

Down to your solicitor to determine if they are viable in terms of being able to meet a claim and the associated costs if there is no insurance in place.0
