  • Do you want a cup of tea and a muffin fresh from my oven :grouphug: You sound like you're having a bad time baking today.

It'll be fine - the use by date is just to cover the manufacturers. There'll be no possiblility of poisoning anyone.

Only risk is that it may have lost some ooomph. If it were me, I'd add a bit more than the recipe asks for.

    Hi pukkamum,

I have just this minute lifted a couple of trays of beautifully risen double choc chip muffins out of the oven.

Sat down, read your post and wondered what date was on my baking powder.....it's May 07 and hasn't made any difference at all. As Penny says the worst that will happen is that it won't work quite so well.

Sorry you're having such a bad day.

Just taken them out of the oven and one hasn't risen at all and the other one has only risen on one side thats it i give up! They do smell good though so i may have to eat all the evidence of bad baking to save my blushes. It is so bizarre when i first started making cakes they almost rose too much! But the banana loaf i made last night rose beautifully!!!! Do you think it's because i am not using an electric whisk?

  • Go, on - pinch one of Pink's muffins ;)

Try taking out a small slice, and taste it. I bet it won't taste bad at all. You can then ice and heavily decorate the cakes, and people will still think that they're far better than the commercial ones that they're likely to be offered.
