Work on house... one generalist or several specialists?

Hello, I originally posted this on the local section but I wonder if anyone can help, particularly with the logistics of carrying out several "small" pieces of work that are all a bit beyond my DIY skills! The bit I've put in bold is the bit I am most interested in at the moment. I've left the rest in for background :)

We want to get some work done on our house. We have contacted several builders and had a few round to look. They have said they will get back to us with a quote but none of them have. They have all said how busy they are (which is fair enough). I wouldn't mind if they rang up and said "sorry I can't give you a quote I'm too busy" but just leaving us hanging seems really discourteous. I wouldn't dream of doing it in my line of work!

So if you are a (verifiable) builder in the Norwich area or know of a good one, I'd love to hear from you.

Basically over the next year or so we would like to remove some of a wall (old external, now internal so RSJ required) to open up kitchen and dining room. Lift and relay a shoddily finished concrete floor, put in french doors on a currently blank wall onto the garden and brick up existing back door. Take down and raise a bizarrely fitted ceiling and install new lighting in the room.

We have a chalet bungalow so at some point we would also like to fit a dormer upstairs so we can have an en-suite as there is no bathroom up there at the moment, at which time we would also like to update our boiler and therefore be able to remove our old back boiler system and fit a newer slim fire in the lounge!

Actually, with all that in mind, would I be better off finding separate people to do all those jobs, or get one generalist in who could organise the lot as although I am a competent DIYer I wouldn't (and probably couldn't cos of building regs) want to do any of the above.
