What's wrong with hydrogenated veg oil?

I had some last friday at the MIL's on some chicken, and it was lush! How do you make your own? Is it literally breadcrumbs, herbs and onion? What about the moistness?

perhaps the moistness is from the vegetable oil???
  • Or water, or milk, or melted fat or oil. All work.

All hydrogenated fats or trans fats as they are also known are now considered the least desirable in a heart healthy diet. http://en.wikipedia.org/wiki/Trans_fat
    Put the kettle on. ;)

Since the 1970s, hydrogenated oils have been implicated in circulatory diseases and heart disease, and increasingly viewed as unhealthy. But they're cheap.
The acquisition of wealth is no longer the driving force in my life. :)

I make my own stuffing from breadcrumbs and herbs (usually thyme) and seasoning. I hold it together with a little marg (or butter) and a bit of water. It tastes just like the stuffing you get in those chicken and stuffing sandwiches (and makes the meat go further;)).

If I wanted sage and onion I'd use different ingredients but the principle's the same. No need to overdo the butter, especially if you're going to stuff a chicken or shoulder of lamb with it the juices will keep it moist.
