how can I delete my messages on my iPhone completely?

    If you are selling it you will need to factory reset it in iTunes and remove it from your account, if you dont remove it it wont be any use to the buyer.

    The factory reset is the way to do this. If you're still worried that someone determined enough could disassemble the phone and recover your data from the memory structure, then nothing anyone says here is going to fully reassure you. Best to destroy the phone via incineration or similar.
