I am looking for a 10" Windows 10 (compatible) tablet - it must be reasonably rugged (or have the option of a rugged case) - it must cost less than £250 and it MUST be PXE network bootable !

Since tablets tend not to have network ports the PXE could be a problem. Not sure whether it is possible to PXE boot via a USB-Ethernet adapter0

It appears to be what I am after - providing RJ45 connectivity

Double check that you can PXE boot through the docking station. It's not always possible as some docks rely on software to be running on the machine to get full facilities.
Dell D series docking station wouldn't allow PXE booting as just one example.0
