London tube / train / bus with teenagers...?

HI all
Anyone know their way around the best value tickets for London Public Transport for visitors to London with teenagers?
Many moons ago I lived in London so know my way around the network but the new ticketing system is all a bit of a mystery when you have older kids in tow.
When i go alone I use my contactless card no problems.
But now our kids are 12 and 13 so no longer travel for free....
We do have a family rail card but my problem is that I don't always want to start the first journey of the day at a BR station.
We are going into London for 2 days staying overnight at YHA St Pauls Cathedral.
We want to start at Bexley train station (zone 6?) and want to spend one day around London Docklands going to London Museum of Docklands and also going to O2 to see star wars identities....
we will stay at YHA St Pauls and spend another day at Museum of London which is walking distance of st Pauls....
we need to then return to Bexley as we will have left the car there at a relatives house.
I don't mind if we do the docklands things the first day or the second day....
My problem is that we can get the bus to 02 from BExley but I know we can't pay cash on the bus and kids don't have contatless cards....
I know we can get cheap travelcards for them if we buy traintickets using the railcard....
but it seems we would need to get the train into London Bridge and out again to docklands.....
which seem a bit weird...
So my plan then changed to
frist day - Bexley to Cannon St train - walk to St Pauls / walk to Museum of London
second day go over to Dockalands and back to Bexley BUT I don't know what the best tickets would be for 2 adults and 2 teenagers...? We would not be going on train so can;t get the cheap travelcards?
Any help appreciated.....
