My daughter has made my Christmas cake[last years Mary Berry cake mix] When should I ice it please ?
Its wrapped in foil at the moment

I would give the cake a last feed of alcohol and then re-wrap it. I marzipan mine around the 12th and leave out just lightly covered with a clean t towel. Then I ice around the 19th to 21st0

My Mum always iced ours on Christmas Eve, but then she was a working mum and not very well too. In the end I used to marzipan it 2 days before and do the icing on the eve too. Kind of a tradition. But have not done one now for many years as my OH and daughter do not like fruit cake. Not that I could do one now as I have a neural illness that prevents me from doing lots of things easily as I used to do.0

I put the icing on ours about a week before Christmas.
I wouldn't worry about the cake drying out. We usually still have ours until sometime mid March!!Its a good value cake.

I think I may have over fed my xmas cake, have been giving it two tablespoons of brandy a week since October but it really sticky on top and sticking to the greaseproof paper is this what it should be like? can I save it anyway?0

stop feeding it and put it in a cake tin un-wrapped, but line the cake tine with greaseproof. the cake should dry out a bit on top, but the inside should still be moist. then marzipan and ice if you want, or leave it as it is and enjoy.Cats don't have owners - they have staff!!DFW Long Hauler Supporter No 1500

I wouldn't feed it any more, but I'm sure it will be fine. I only fed mine for the first time yesterday since making it in October, and it still feels very moist. I should have been feeding it more though!0
