Meal plan : week commencing 21st January

Here is my plan for the next week, actually to the end of the month(I begin with a Saturday, but I know others don't). My theory to use stuff we have in and not spend too much and to also keep eating healthier.

Saturday : caldo verde
Sunday: out for lunch so just a snack tea. ( egg on toast ?)
Monday : lentil shepherds pie with veg ( cauliflower and carrots)
Tuesday: left over above with baked beans perhaps
Wednesday: salmon in sweet chilli sauce with spicy rice with red beans and a veg or salad
Thursday: h/m bean burger or falafels in a bun or pitta ( gf) and salad
Friday: butternut squash risotto with goats cheese
Saturday: h/m gf pizza with a side of oven baked fries
Sunday: a roast of some kind ( most probably chicken)
Monday: salmon or sardine fish bakes ( hm like M&S ones) with salad or veg of some kind
Tuesday: meatballs in sauce left from tonight ( made enough for 2 meals and froze the rest) with rice or a baked potato
Wednesday: h/m mushroom soup with crusty bread

Lots of the things I have in. I may substitute a meal here and there if I feel like picking a random recipe from my cookery books.

Breakfasts are toast or porridge.
Lunches are leftovers, hm soup, salads various, and a couple of pieces of fruit.
Grocery challenge October: £228.28/£250.00 NSD 4 ( not completed)
Grocery challenge November : £291.65/300.00 NSD 10
Grocery challenge December : £0/240.00 NSD

I'm working on my plan to start from Monday - got a big thingy of chicken out of the freezer so you may see a theme...

Monday/Wednesday/Friday - Gym day - Breakfast: low fat sausage and HB egg, Lunch: sliced chicken, baby toms, carrot sticks and dip (maybe hummus or a seasoned mayo)

Tuesday/Thursday - Breakfast: oats, yogurt and fruit, Lunch vegi couscous or quinoa

    Dinners
Monday - roast chicken dinner (leftovers from Sunday)
Tuesday - chicken and prawn paella
Wednesday - chilli/lime chicken stir fry
    Thursday - thai noodle curry
    Friday - Leftover day.
That sounds like a classic case of premature extrapolation.

House Bought July 2020 - 19 years 0 months remaining on term
Next Step: Bathroom renovation booked for January 2021
Goal: Keep the bigger picture in mind...

No doubt this might vary a wee bit but thanks to this thread I actually followed a plan last week

Tonight - Haddock, wedges with mushy peas and pickles followed by LO trifle
Sunday - Lamb steak marinated in olive oil, garlic, lemon and oregano, with baked sweet potato and roasted baby toms, mushrooms and pink onions
Mon - HM steak pie, savoy cabbage
Tues - LO chicken casserole with pasta
Weds - Haggis, Neeps and Tatties
Thurs- [STRIKE]Last portion of liver and bacon from the freezer with[/STRIKE] LO mash and something (poss sausages) decided I didn't fancy haviing liver after the haggis:)
Fri - Lasagne, garlic bread and salad

Plenty of soup in the freezer for lunches this week so no need to make any, so lunch will either be soup or "something" on toast. Very little actual cooking this week as most or a least part of meals are "here's one I made earlier" jobs from the freezer
  • This is something I find quite difficult to do but here is an attempt.
Sunday - Beef brisket in slow cooker, mash or roast potatoes, swede, carrots and broccoli. My first problem is will there be any leftovers from the beef? Its a fairly small piece but I have no idea! How can I tell now, lol?
Monday - Sausages, mash and beans
Tuesday - Chicken fajitas - need a red pepper & some sour cream
Wednesday - Gammon (from freezer) & pasta & sauce for us. Not sure about the kids, some form of junk probably!
Thursday - Chicken curry & rice
Friday - Pizza & salad. Need to buy salad.Haven't got a gluten-free one though so may need an alternative for son.
Saturday - Chicken burgers, salad & wedges

Not particularly healthy by any means but its the week before pay day so will have to do!

Sun - LO Roast pork and veg chow mein (beansprouts, sprouts, mushrooms, sugar snaps, carrots, rice noodles, sauce pot)
Mon - Chicken and veg stir fry with rice (beansprouts, sprouts, sugar snaps, carrots, cashews, plum sauce)
Tue - Chili (HM in freezer) with rice
Wed - Fajitas (corn tortillas, seasoned mince, refried beans and cheese) with sweet potato wedges (wedges and cooked mince in freezer)
    Thurs - Fajitas
Fri - Spaghetti with spinach and pesto, green beans and grilled chicken (chicken and spinach in freezer)

Everything I need is in, having a use up week before payday! Lunches will be omelette or soup and crackers on days I'm at home. Two days in uni I buy soup for £1 and take crisps and a drink with me. Two days in work I take HM ready meals - pork fried rice this week.
