Was at butchers yesterday and he had a special on lovely looking beef olives. Bought them, got home, then realised don't know how to cook them!
Anyone? And can they be frozen?

Yes you can freeze them...
I would roast them in the oven..and they are lovely with a creamy sauce...-6 -8 -3 -1.5 -2.5 -3 -1.5-3.50 -
I usually cook them in the oven in some stock, like a casserole with lots of onions. lovely
brown them first though.

For me I would put them in a casserole dish, lined with onions and topped up with Oxo and some water. I've never sealed mine and they come out fine, I do mine like Fletch, stock cube and carrots and swede. Yum I love them with brussel sprouts. I am not sure if it is just a Scottish thing but we can get our stuffed with oatmeal instead of sausagemeat which I think is much nicer.0

After reading this thread I thought I'd try my hand at making them We are 6 in the family and to buy beef olives costs ££.
Beef was on offer at Tesco's so I asked the butcher to cut 10 slices as thinly as he could. (I could have made it 8 as there are two left over and also I'll try it with a cheaper cut of meat next time.) Cost £8.
Bought sausages cost less than a pound as I used 5 or 6 max
Bought value pack of sage and onion stuffing.
Mashed together 1 grated apple/skinned sausages/fried off leek/stuffing
Bashed the meat out in the middle of a teflon liner with my fist (lol - builders outside banging and me inside!) next time I'll ask the butcher to trim off all the outside fat as I paid for this then cut it off.
Roll a portion of sausagemeat stuff up inside a piece of beef. Stored in fridge as this was for next days meal.
Intended to do them in the slow cooker but didn't get up in time (eating dinner at lunch time on Saturday).
Rolled them each in cornflour and put in casserole dish - quite a neat fit. Oxo stock cube and carrot, pour on hot water to just cover. Cover with foil, lowish oven for and hour or so.
Did boiled pots and green veg - v nice and eaten up by all at the table with no complaint whatsoever.
Maybe not quite a money saving dish but compared to buying them for us it was cheaper and made a very nice 'special' meal.0
