Tiling/splashback and up stands...advice please

I'm having Athens brick black tiles on my large window sill and am carrying them forward down behind sink/taps do I have an upstand or not on this 7ft stretch of wall. Also, in two minds whether to use same tiles as splashback behind induction hob on opposite wall......so do I stop upstand at either side of splashback or run it straight along this long wall. If not using tiles as splashback thinking of using matching shower panel that matches exactly worktop (premier twilight 033) should that go on top of upstand. So many decisions to make with a new kitchen. Any advice would be greatly appreciated.

I thought upstands and splashbacks were for painted walls. A tiled wall shouldn't have either.

Yes, I do have newly plastered walls which are painted. Tiling windowsill and down to meet worktop behind sink, I was just unsure whether to leave the upstand off this stretch of wall. Deciding whether to have the same tiles as splashback or use a shower panel that exactly matches my worktop. So prob I should stop the upstand at either side of splashback, I know I've seen photos where some kitchens have both......upstands with splashback above
