    :rotfl: Cheese is the first thing I look for in the supermarkets after Christmas - hunting cheap Christmas cheese is a yearly game in our house! :) I freeze stilton, it's fine when it defrosts - I find it better for cooking afterwards too as it can be a bit crumbly when it defrosts, but otherwise fine.
    I love that I stumbled on this thread, albeit it too late to save the Christmas leftovers! I'm the world's biggest cheese fan and am totally enamoured with the idea of having blocks of leftover stilton etc in the fridge ready to cook with!

    A great bargain for the freezer is reduced Parmesan.

    I buy lots, grate it in my food processor and you can just take out what you need.

    OP, I'm guessing you picked up some of the 90p Stilton from Sainsbury's too :) I freeze cheese all the time, I probably wouldn't thaw it and eat it on a cracker but it's absolutely fine for cooking with.
  • I've not yet found cheese that doesn't freeze. I always freeze strong cheddar, I find that intensifies the flavour and although it can sometimes go a bit crumbly, I like that.
    I was jumping to conclusions and one of them jumped back

    a always buy ys cheeses and freeze, it may just crumble more thats the only difference i have noticed!x

    end of the day it all goes down the same way and I usually grate my cheese anyway to make it go further :):)

    Here's a trusted recipe for cheese and chilli scones (I've used frozen Stilton here with great success), great with soup in the winter.
