I freeze stilton, it's fine when it defrosts - I find it better for cooking afterwards too as it can be a bit crumbly when it defrosts, but otherwise fine.

A great bargain for the freezer is reduced Parmesan.
I buy lots, grate it in my food processor and you can just take out what you need.0 -
OP, I'm guessing you picked up some of the 90p Stilton from Sainsbury's too
I freeze cheese all the time, I probably wouldn't thaw it and eat it on a cracker but it's absolutely fine for cooking with.

I've not yet found cheese that doesn't freeze. I always freeze strong cheddar, I find that intensifies the flavour and although it can sometimes go a bit crumbly, I like that.I was jumping to conclusions and one of them jumped back0

a always buy ys cheeses and freeze, it may just crumble more thats the only difference i have noticed!x0

end of the day it all goes down the same way and I usually grate my cheese anyway to make it go further
