Help with control accounts and payroll

this is a time limited question: can anyone point to an idiot's quick guide to control accounts and payroll?
Trying to record journal entries for payroll in an Excel spreadsheet, relating to one employee whose funding comes from three restricted grants, we've got details of the monthly gross payments, tax and NI - just not sure what / how to record it in the control accounts.
