I'm sure more people get into trouble with turkey that has been cooked before totally defrosted than cooking a day or two after the defrost in the fridge has finished0

Just keep it in the fridge and cook it on the day.

I was just going to cook it tomorrow but woke up not feeling to great so decided to just cook it today as the thought of rushing around tomorrow with the flu didn't seem to great. It went well thanks. I cooked, cooked and sliced on Christmas Eve and reheated the sliced I needed yesterday by poring over some stock and it came out great.
Given it is a crown and cooked in around 1.5-2 hours I don't really think cooking in advance saved much time but was convenient.
