Travel insurance to "dangerous places"

My wife is from South America and sadly our Government advises against travel to parts of her country - often places which are safer than some parts which the FCO say are safe.
Any ideas about how to get travel insurance which will cover us? I am worried that if I get sick I will be refused the bill.

Had no problem getting insurance for my son to go on a 5 week trip to Colombia last summer.

Does she intend visiting the "dangerous" places whilst there?

Yes we do as there are some amazing places which are "only essential travel only" (what is essential travel?)
However I checked a mainline insurance and they said it is only places where all travel is advised against they don't cover, not "only essential travel" so I should be fine.
Amazingly the FCO says half of Colombia is of a similar risk to Bagdad in Iraq or Kabul in Afghanistan, which doesn't seem quite right.
