I have pickup up 6 ripe bananas for 30p, I've made 12 banana bran muffins, can I mash the remaining 3 bananas and freeze them ready to make muffins again next week? Does anyone do this?

I freeze sliced ones for smoothies so I don't see why it wouldn't work. Texture is affected by freezing but that won't matter in this caseI’m a Senior Forum Ambassador and I support the Forum Team on the Pensions, Annuities & Retirement Planning, Loans

Go for it, mashed or sliced it freezes just fine and is great once defrosted as a base for banana bread.Value-for-money-for-me-puhleeze!

I normally just chuck them in the freezer with the skins on, and then just take them out when I need them. They go quite soft and squidgy when you defrost them (there's little more horrible to hold than a cold, thawed banana
) but they're perfectly fine for baking.

I didn't think banana would freeze. I wish i'd read this last week i got a great big bag full and been eating them like crazy.Liverpool is one of the wonders of Britain,

Personally - I found it didn't work out to leave the skins on them.
I always remove the skins before bagging them for the freezer.
I've now discovered I can eat frozen fruit literally straight from the freezer - with only the briefest token defrost (around 10 minutes or so) - provided I pour some cream over them first. In my case - I tried it with frozen mango chunks with some oat "cream" poured over them. Followed by going back for some more and then going back for some more.....nom0 -
I make a lot of banana cake and so freeze ripe bananas in little bags of three so I know I have the correct amount. Tend to freeze in little rigid plastic containers ( usually the ones I have frozen raspberries from Lidl) I mashed them firmly with a fork and they defrost very quickly.0
