How can I disable updates ?
Can I do factory reset to restore to original condition ?

You won't get any more updates, it's EOL, it may get a security update but I doubt it.
Yes you can do a reset but it will restore to the latest update that was on it, if you want an older version of the firmware you'll have to downgrade manually, you can get the idea of what's involved from here:

Why do you want to reset and restore, also is it an original nexus 7 or a 2013 model ?Science isn't exact, it's only confidence within limits.0 -
Even though there might not be any more updates to the operating system, unless you have disabled auto-updates for any installed applications you have, these will still update from Google Play.
If you want to stop this, just go to your Play account (if you have one that is), "Settings" and then click on "auto-update apps".
You can then opt to disable it.0 -

I want to keep it clean, clean install, have heard if you update operating system can cause problems, make it slow. Don't know much about Android operating systems.

I own a 2013 but not gen 1, works fine with Marshmellow (6.0) so I can't comment from personal experience on how the gen 1 plays with the latest update. The 2013 model is significantly more powerful than the gen 1 model.

I had a nexus 7 2012 it worked great on kitkat then I updated it to lollipop and it shafted it! it ran very very slow drove me nuts, do not update to Lollipop. google "problems with nexus 7 2012" and you'll see what I mean.
If updates come through, just ignore them0 -
If you bought it from Argos this year it's a gen2. Easy to tell - gen 1 has a bumpy back and no rear camera. I don't think gen 1 every got Marshmallow, and gen 2 is now stuck on Marshmallow with just security updates. I don't think there's any need to disable updates if you're already on Marshmallow.0
