Leftover veg from roast

    I saw Jamie Oliver use them this week, he chopped them all up and put them in a frying pan, and pushed them down with a potato masher, he just made it into one big patty. cooked until brown and crispy on both sides and slid it out and cut into slices like a cake, looked delicious

    That's how I always have made mine.

    It takes a while and you are forever stirring and pressing down and mixing up, but it eventually gets a crust so you can flip it over and crust the top

    It's a big favourite in this house. Can't wait for the day after Boxing Day when that's in the menu with cold ham and a poached egg and pickles

    Everyone has their own way of doing these. All sound great.

    Mine is.... get everything left over, and I mean everything, including gravy, spuds, veg, scraps of meat, everything into the blender. Couple of pulses, scoop out, shape, then the usual flour egg and breadcrumbs, and either shallow fry or spray with oil and into the oven.

    OMG they are gorgeous, even if I say so myself!

    They are great on Boxing Day, even better if you have time and sobriety to make them up on Christmas Night for the next day!

  • If it won't "stick" as patties, shrug & blitz it into a lovely hearty soup. You honestly cannot go too far wrong!
    (Says she who burned the confection, ahem.)
    I absolutely love soup made with left over roasted veg, especially if there's peppers and tomatoes included :)
