Leftover veg from roast

I have a marge tub full of lo veg and roast potatoes. I remember recently someone (I think it was Jackie O?) Saying they make patties with lo veg. Is it just matter of mashing the veg together and shaping and frying or do it need to add anything for them to bind?

This afternoon I was watching Nigel Slater and he did something similar.
He just put everything he had in a frying pan and cooked it until he had a nice crust, so you could do the same and make little patties. he said just break the roasties up with your fingers because it shouldn't be mushy, but he didn't add any binding ingredient.
My husband would like that because he likes dark crispy bits when I make bubble and squeak

If it won't "stick" as patties, shrug & blitz it into a lovely hearty soup. You honestly cannot go too far wrong!

I would go with the soup idea.. in fact I may do extra veggies at Christmas so as I have left overs for boxing day lunch.Dogs return to eat their vomit, just as fools repeat their foolishness. There is no more hope for a fool than for someone who says, "i am really clever!"0

For future ref, Roast veg can be frozen and reheat very well., I often do extra "use up" the end of bags of root veg in this way, carrots are surprisingly good.(don't tell Kevin!)0

I always cook extra veg so that I can have the LOs for my lunch. Fried up with some cold meat and pickles they're tasty and healthy. It's a Boxing Day staple but I enjoy it all through the year.
The patties work best if you've got mash to mix the other veg into (either mashed potato or swede/carrot). I've heard some people use an egg to bind it together. Personally I don't care if it all falls apart! It still tastes good.0 -

Yes I break it all up and mix together and shape into small patties and dip in seasoned flour ,egg and dried stuffing and shallow fry in the frying pan.
Bit like hash browns .Great way to use it up and if you throw a couple of sausages with them as well you have quite a hearty warming meal for very little cash. Good for filling up hungry grandsons when they come home from rugby practice with hollow legs

If I have leftover veg like this I often fry an onion & other fresh veg (if I don't have enough leftover veg) & then add the leftover veg. If there's some left over roast include that or bacon or fried egg on top.
Great way of using up those bits & bobs that are lurking in the fridge.

I saw Jamie Oliver use them this week, he chopped them all up and put them in a frying pan, and pushed them down with a potato masher, he just made it into one big patty. cooked until brown and crispy on both sides and slid it out and cut into slices like a cake, looked delicious0
