Totally my mistake, my mind was elsewhere but I've made a mistake with a batch of Delia Smith's sweet Mincemeat. I was making the vegetarian option i.e. Adding vegetable suet instead of regular suet
Anyway I added my 6 tbs of brandy and then realised I should have added it AFTER it came out of the oven NOT BEFORE it went into the oven. Shouldn't have been watching the telly and cooking at the same time
Now I'm wondering what to do. Add more brandy after the mince cools, or let it sit as it is? Ok I know to do a taste test.
I'm assuming the brandy acts not only to taste the mince but also as a preservative and with the alcohol burned off the preservative element has gone but the brandy taste remains
Suggestions would be appreciated. Add more brandy - any guidelines

I would add the brandy again at the end. There isn't lots in her recipe so it shouldn't taste too strong. I often add more brandy when I use the mincemeat in a recipe and don't think it is too strong. Did you make the cranberry version. It's really fragrant.0

No, her traditional version the only change was switching from regular to vegetarian suet0

I would add afterwards as recommended by the original recipe. Any alcohol in the mincemeat will have been burned off in the oven and the residual taste will be marginal.Value-for-money-for-me-puhleeze!

It's only 6 tablespoons, not half a bottle. Just carry on as if you'd not done it.0

Thanks guys. As a non-drinker I wasn't to sure about the booze element. Added the brandy plus an extra one for the fairies 😋

If you need any more help, I'd be happy to come and do a taste test.
(I'm vegetarian, so it'd be perfect for me, with veggie suet in it).;)
