How can I find a genuine bargain last-minute holiday?

We're hoping to go away for some sunshine in February but I d on't want to book it until nearer the time because of an unwell elderly parent. So in January when I think things are ok, how can I find out if last minute deals are genuine bargains please? I don't want to pay over the odds because of my late booking, I want to buy a holiday that is reduced as the company haven't sold it and want it gone. Any tips please? I'm not sure that Last Minute has many bargains.
