Ryanair Gift Voucher query

I have been given a Ryanair voucher for 50 euros as a gift. The expiry date given is 9th December '16 however it is not clear whether the booking needs to be made by the 9th or whether travel has to be actually completed by then.
Also I am in the UK and am planning to travel within the UK so I am unsure whether the fact that it is in euros will complicate the booking.
Does anyone have any experience of using a Ryanair gift voucher? Any info in regard to these 2 points would be much appreciated.
