We do a Melanzan alla Pargmigiana (http://www.bbcgoodfood.com/recipes/10033/aubergine-tomato-and-parmesan-bake-melanzane-alla-). Should still go pretty well with the rest?
The other major vegetarian dishes I do tend to be Indian food - Paneer is great for protein.0 -
I think I'm going to go with this for teenage daughter.

My vegetarian friends are fed up with "vegetarian versions" of ANYTHING! They honestly prefer if I just do them lots of yummy veg instead. SO a really good mix of potatoes, carrots, parsnips (ok keep them in a separate tray!), cabbage or sprouts, vegetarian stuffing balls (mine are anyway but maybe not everyones are?) and I do peas and sweetcorn too...
I don't want pastry on my plate as I get bloated and too full up then there's no room for the afters.
This year I am disappointed with the Christmas v options in my local restaurants, a few have offered risotto which is ok but doesn't go with sprouts roasties and gravy imo . Another offers goose fat potatoes. Or for veggies salad!0 -
I've just pre-ordered this chestnut, parsnip and camembert pie for my Christmas dinner https://christmasfood.marksandspencer.com/parsnip-camembert-and-chestnut-pithivier/p/p600626970

Nothing wrong with having the same thing every year, its what the meat eaters do - they eat turkey every year. For meat eaters Christmas dinner is just a fancy roast and most people eat a roast at least once every few weeks.
Its not the food you eat that makes it Christmas dinner, its the way is served with the table spread and your posh dinner service. Plus of course the people you eat it with.0 -

this is nice and vegan too. The chestnuts come in 200g packets so I just scale the recipe up
We like this too

I used Cheezly instead of real cheese which works justs as well0 -
I will be cooking Turkey and all the trimmings for 4, my oven is not very big so my dinner will all the veg an roast potato with cauliflower cheese, I will bake it in advance so the top is browned and microwave before serving (there is not enough room in the oven to do it fresh). But I feel this will be more forgiving if reheated fancy mushroom and chestnut pie I spent ages on last year and just went soggy on reheating!Dogs return to eat their vomit, just as fools repeat their foolishness. There is no more hope for a fool than for someone who says, "i am really clever!"0

My OH is veggie, I've made but roast, bought nut roast before, he doesn't like mushrooms (which a lot of veggie dishes seem to have...mushroom risotto seems standard veggie offering in many restaurants) and there's only so much goats cheese and beetroot one can eat (again seems to now be standard veggie offering).
I was getting frustrated trying it find him something special for the big day that he'd actually enjoy, finally he actually requested what he wanted.....quorn sausages,Feb 2015 NSD Challenge 8/12JAN NSD 11/16

I'm not veggie but there is very little meat I will eat and I don't like turkey. I do actually like nut roast and have been looking everywhere for a frozen one without luck
am going to try Waitrose nearer Christmas. Can't make my own as we have no cooker until our new kitchen is installed in Feb. If anyone knows where I might get one I would be grateful!

Do you have a Cook! store near you? I love their food, yet to find anything that doesn't taste fab
