Haslet is meatloafish ... except its generally offal/scraps of meat mixed in with a cereal base of some kind - more like scrapple ( which uses cornmeal) than meatloaf really.
I don't make meatloaf these days much ( although I should :P ) I tended to use half and half sausagemeat/minced other meat. You can vary the meats used - try turkey mince for example if its on offer or you're trying to cut down on fat. ( Depending on what meats you use, you may need to drain off some fat before serving ) If you have odd scraps of bacon or even cooked gammon etc that need using up, they can be chopped up and go on.Also think of adding other veggies - finely chopped mushrooms mixed in or a layer of sliced ones down the middle is great, grated carrot, courgette, peppers, tomatoes, apples - its a case of experimenting until you come up with something that really works for you !" If you knew what was in haslet, you probably wouldn't eat it: "edible entrails, esp. of a pig, shaped into a loaf and cooked". [Chambers]
I like it too, but meatloaf is better.

Whilst I don't like eating offal per se, I don't mind it if its chopped up into tiny unidentifiable bits a la haslet, haggis ( or scrapple :P ) at least its honest about what it is !
