    She's clearly breaking the law by not paying you NMW, as you know yourself you're not really self-employed.

    Up to you if you fight it. You could report her to HMRC, and she'll likely sack you at which point you could try and bring about a tribunal claim for unfair dismissal and unlawful deductions from wages. There's a cost to doing that though, and it sounds as though you're pretty desperate for the job. I think you should look for something else and report her ASAP.
