Want to open up kitchen into dining room, doors onto garden, reposition the staircase from dining room to somewhere if possible.

I will of course tell them what I want and what my budget is.

What should I be asking them? What should I be looking for from them? Should I be telling them what things I don't want?

Should they come up with some ideas on the spot?

Just do not know what to expect.

    Tell them your budget, tell them your priorities, explain how you want to live in the house and anything that's a definite no no.
    They might give you some off the cuff thoughts but with your situation I'd be surprised if you get much as the stairs are such a crucial part of the layout and that really needs a measured survey to get things moving
