best way to get to Adriatic coast italy

can anyone advise me the best way to travel to the adriatic coast for one week next july/august.
Not sure of the best way to book is a package now better (ie cheapest) or book seperate flights and hotels or try to get a cancellation nearer the travel dates which are probably the last week in July first week in August.
There will be 2 adults and one 16 year old
We would like to travel from Newcastle if possible or anywhere near the North East.
