fridge water supply

I'm planning to move my fridge from the utility room to kitchen. We are putting down a new floor, so old floor has all been taken up exposing the concrete floor. I was planning to cut a trench in the concrete and lay the plastic water pipe in it.
Is there any reason why I shouldn't do this? There won't be any connections in the run of pipe under the floor.

ETA; did this before in another house but I'm a bit more cautious now, probably just over thinking it. We are putting down an expensive (for us!) wooden floor so that might have something to do with why I'm hesitating a bit.
