Breadmaker help

Can anyone advise whats wrong? The bread doesnt seem to rise properly in my new breadmaker. Its all sort of heavy and doughey and frankly horrid. Im following the recipes and instrustions to the letter, using tepid water etc...

    exactly what ingredients are you putting in and in what quantities and what order are you putting them in?

    For a 1.5lb loaf I put in 18oz of hovis granary flour, then 1oz of butter at room temp, then 2 tsps sugar, 1 1/4 tsp salt, 275ml luke warm/tepid water and finally a sachet of hovis yeast

    then choose the correct setting on my BM for wholemeal/granary bread (which is a different setting than for a white loaf) and then select the correct size.

    Are you selecting the correct settings?
  • Sounds exactly what Ive been doing.. I shall try one further loaf on a different setting ( currently on the standard white loaf setting) and see what happens. Otherwise I will take it back!

    We tried various bread makers with mixed results then we tried a Panasonic. The difference was well worth the extra we had to pay for it. Have not had a poor loaf yet.
    I used to be indecisive but now I am not sure.

    if you've been doing a granary loaf on a white loaf setting then this will be the problem. Granary loaves require longer baking. On my BM the small white is 2hours 55 mins and the small wholemeal/granary setting is 3 hours 32 mins!

    p.s. are you using proper butter or an oil based substitute? It all makes a difference.

    I read this with interest as a friend bought me a breadmaker - MOrphy Richards; I had wanted a Panasonic as these seem to be popular. I think having reread the documentation which came with mine that I should not have used extra strong flour but just strong flour. Maybe this is the reason?

    Did it reach the top or near of pan when it was cooked?

    Just asking as some folk not used to HM bread expect soft cotton wool sliced bread type of loaf

    HM bread is generally denser and closer in texture than commercial bread

    sorry I should have been clear- I am using the correct setting for the right loaf. Only im using a white flour so white bread setting...
