Any good thai coconut soup recipes?

Hi all,
I love thai coconut soups - if anyone has eaten at Busaba Eathei they do a lovely Northern Thai laksa that is basically what I'm trying to recreate.
I've tried a few times with different recipes, and it always ends up coming out more bland than I would like.
I have a really good hot and sour soup recipe which has a great tanginess to it, so I tried adding the balsamic and red wine vinegar I use in this to a coconut soup but it just tasted a bit odd. If anyone has a tried and tested really flavourful thai coconut soup recipe, I would love to hear it! :beer:

I'm following with interest - I tried to recreate the one they used to serve in Tampopo with varying success. I think the key is finding a good base or paste (I use Thai Taste Red Curry Paste from waitrose/Ocado) and mix with stock and tinned coconut milk - i then add flavourings to suit (lime, ginger, galangal, thai fish sauce, jaggery/palm sugar, garlic etc...)

My hot and sour soup recipe makes 1 portion as it's only me that eats it, but if you did want to make more, you could just adjust the quantities
- 350ml chicken stock
- 2 tablespoons balsamic vinegar
- 3 tablespoons red wine vinegar
- 1 teaspoon thai red curry paste
- 1 teaspoon lemon juice
- 1 serving of noodles (I use dried noodles but you could use fresh if preferred)
- 1 crushed garlic clove
- finely chopped ginger to taste
- chopped coriander to garnish
You literally just put all the ingredients in a pan and heat for a few minutes until hot - extremely easy!
You could also add meat if you wanted or any other chopped veg but this is the basic recipeMortgage received 21/12/2018
