Just today i got our Wii U up & running but it only came with 1 of those huge controller things.
There's a Wii at my mother's which i don't think gets used. It has the Wii Wheel for Mario Kart & the Wii Mote remote things.
Couple questions here...
1) Can you use the Wii Motes with the Wii U?
2) Can you use all Wii games on the Wii U?
Sure would save me a few quid if it's a yes to either or both.

Yes to both - you can use use Wiimotes with the Wii U and you can play Wii games on it. It may vary between games which controllers they support although the Nintendo ones at least seem to be quite flexible as for a four player one person had the gamepad, one a Wiimote, one a Wii classic controller and one a Wii U pro controller which all worked fine.
