Did your friend get a copy of the original contract? Has she (or you) seen a copy of the changed contract? Presumably the changed contract wouldn't have your friend's signature on it.
    If it sticks, force it.
If it breaks, well it wasn't working right anyway.

They didn't. OP says her friend rang to inquire and was told about the contract being altered.
No-where did it say they had to inform OP

That's not what the title said but it has been changed now

Op when your friend rang up, how did the salesman know it had been changed without her knowledge, as he wasn't the original salesman,it suggests there were some notes on the order form

As it has the upgraded paint on the order form, I would demand to speak to the Dealer Principal and ask what is going on. And be prepared to cancel the order if they are not prepared to supply the car as per the order, with a full refund of any deposit paid.

If the contract that was signed said a car with premium paint would be supplied and it hasn't - that's breach of contract.

If the contract didn't say anything about premium paint, but the salesman said that a car with premium paint would be supplied and it isn't - that's misrepresentation (which may be harder to prove).

Either way, your friend does not have to accept a car without premium paint.

(Although maybe double-check the contract to see if it allows the dealer to change the spec of the car supplied etc.)

The order form/contract will almost certainly have a bit about the manufacturer having the right to change the spec - modify the standard fittings, make improvements etc.

But I've never heard of a dealer having any rights to change any spec options - either adding or deleting them.

I suspect that the car will arrive with the correct paint and the OP's friend be asked to pay extra.

That of course would be the start a different discussion.

And whether they'd stand up in court is another thing.
